So I'm talking to N. about making ragou bolognese for dinner tonight, and I mention that we'll be reducing milk, boiling the water out and leaving the milk proteins. Sigivald interrupts to say that we could just use powdered milk, since that's already a waterless milk protein thing. We declined to use powdered milk.
